Ingredients
- ½ cup oat bran
- 2 cups white rolled oats
- 1 onion finely chopped
- 1 tomato finely chopped
- 1 stalk curry leaves
- 1 capsicum finely chopped
- 4-5 French beans finely diced
- 2-3 green chillies finely chopped
- 1 tbsp. coriander leaves finely chopped
- 1 lemon juice extracted and strained
- ½ tsp. each mustard & cumin seeds
- ¼ tsp turmeric powder
- Salt to taste
- 1 tbsp olive oil
Preparation
- Roast both oat bran and rolled oats for 3-4 minutes & allow cooling.
- Heat oil in a non-stick pan, add seeds, and curry leaves, Chillies, allow spluttering.
- Add onions, tomatoes, capsicum, French – beans stir-fry for two minutes.
- Add rolled oats & bran, turmeric, salt, and a cup of water.
- Cook on low heat, till fluffy and excess moisture evaporates, stirring continuously.
- At last add lemon juice and coriander leaves and mix it well. Serve hot
