Bruschetta Recipe
Ingredients
- 1/4 cup olive oil
- 1/2 teaspoon oregano
- 3 to 4 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium capsicum , diced
- 1 medium bell-peppers , diced
- 2 medium tomatoes, diced
- 2 tablespoons grated cheese
- 1 loaf unsliced French bread
Method
- In a large bowl, combine oil, oregano, garlic, salt and pepper. Add tomatoes , capsicum , bell-peppers and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour.
- Cut bread into slices- as per choice; toast until lightly browned. Top with tomato and bell-pepper mixture. Serve immediately.
