Bruschetta Recipe

Ingredients

  • 1/4 cup olive oil
  • 1/2 teaspoon oregano
  • 3 to 4 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium capsicum , diced
  • 1 medium bell-peppers , diced
  • 2 medium tomatoes, diced
  • 2 tablespoons grated cheese
  • 1 loaf unsliced French bread

Method

  • In a large bowl, combine oil, oregano, garlic, salt and pepper. Add tomatoes , capsicum , bell-peppers and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour.
  • Cut bread into slices- as per choice; toast until lightly browned. Top with tomato and bell-pepper mixture. Serve immediately.
