Oat Upma

Ingredients

  • ½ cup oat bran
  • 2 cups white rolled oats
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • 1 stalk curry leaves
  • 1 capsicum finely chopped
  • 4-5 French beans finely diced
  • 2-3 green chillies finely chopped
  • 1 tbsp. coriander leaves finely chopped
  • 1 lemon juice extracted and strained
  • ½ tsp. each mustard & cumin seeds
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1 tbsp olive oil

Preparation

  1. Roast both oat bran and rolled oats for 3-4 minutes & allow cooling.
  2. Heat oil in a non-stick pan, add seeds, and curry leaves, Chillies, allow spluttering.
  3. Add onions, tomatoes, capsicum, French – beans stir-fry for two minutes.
  4. Add rolled oats & bran, turmeric, salt, and a cup of water.
  5. Cook on low heat, till fluffy and excess moisture evaporates, stirring continuously.
  6. At last add lemon juice and coriander leaves and mix it well. Serve hot
